Orange Cranberry Drops
It is not often we hear oranges and cranberries being combined together, but this combination brings out a refreshing taste. Try this recipe using orange juice and dried cranberries, resulting to a drop cookie that is beautiful to behold and pleasing to the palate. (Yields 3 dozen.)
Ingredients:
1/2 cup white sugar
1/2 cup packed brown sugar
1/4 cup butter, softened
1 egg
3 tablespoons orange juice
1/2 teaspoon orange extract
1 teaspoon grated orange zest
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries
Directions:
- Preheat oven to 375 degrees Fahrenheit. Lightly grease the cookie sheets or place parchment paper over them.
- In a medium bowl, combine white sugar, brown sugar, and butter. Mix them together until its texture becomes creamy. Stir in the egg, orange juice, orange extract, and orange zest.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt. Place the mixture on a sifter and sieve over a large bowl.
- Add the orange mixture to the flour mix, then stir in dried cranberries.
- Place heaping teaspoonfuls of the mixture onto the cookie sheet, about two inches apart.
- Bake for 10 to 12 minutes or until edges are starting to brown. Cool on baking sheets for 5 minutes, then place the cookies on a wire rack to cool completely.
