Glazed Lemon Cookies

  • 2 cups all-purpose flour
  • 1 cup confectioners' sugar
  • 3/4 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 2 large egg yolks
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 2 tablespoons fresh lemon juice, plus more if necessary
  • 1 teaspoon grated lemon zest

There are people who like cookies that have that citrusy flavor. It gives the cookies that unique tang to make them irresistible. Here is a recipe for Glazed Lemon Cookies to try out.


  • Mixing bowl
  • Electric mixer
  • Baking sheet
  • Parchment paper
  • Wax paper


  1. Using an electric mixer, beat the butter and granulated sugar until it becomes fluffy. Add in the egg yolks, salt and vanilla. Beat to combine the ingredients. Add in the flour little by little. Mix them just enough to incorporate the ingredients.
  2. Divide the resulting dough in half and shape them into 1 1/4-inch diameter logs. Wrap them in wax paper and refrigerate for about 30 minutes or until the dough becomes firm. The logs can be refrigerated for up to two months so you can only bake what you need.
  3. Slice the logs into 3/8-inch cookies and line them up in parchment paper-lined baking sheets 1 1/2-inch apart from each other. Bake in an oven preheated to 350 degrees F for 15 to 20 minutes or until the cookies turn light golden brown.
  4. Remove from the oven and let the cookies cool at room temperature for 5 minutes. Transfer to a wire rack to cool them completely.
  5. In a small bowl, whisk the confectioners’ sugar, lemon juice and zest until it forms a thick glaze.
  6. Dip the top of each cookie into the glaze and let it set for 15 minutes.
  7. Recipe makes 4 dozen cookies.
