Lemon Squares
Cookies don’t have to be just chocolate. Home cooks can satisfy their sweet tooth by baking fruit-based cookies. Lemon squares are arguably one of the tastiest among the lot, with this recipe featuring a hint of coconut to make it less sour. Try it on a weekend, for your company party, whatever. People will surely come back for more! (Yields 36 squares.)
Ingredients:
2 1/4 cups all-purpose flour
1 cup chilled unsalted butter, cut into small pieces
1/2 cup powdered sugar
1/2 cup sweetened flaked coconut
2 cups sugar
4 large eggs
1/2 cup fresh lemon juice
1 teaspoon baking powder
powdered sugar
Directions:
- Preheat oven to 350 degrees Fahrenheit. Grease a 13x9x2-inch baking pan with butter.
- In a food processor, combine 2 cups flour, pieces of butter, 1/2 cup powdered sugar, and coconut. Process until moist clumps form.
- Press the mixture onto the baking pan. Bake for about 20 minutes or until edges are golden.
- In a large bowl, whisk together 2 cups sugar, eggs, lemon juice, baking powder, and the remaining 1/4 cup flour until well-mixed.
- Pour the lemon mixture over the hot crust. Bake for about 25 minutes or until topping is set and light brown.
- Cool the pan on a wire rack. Once completely cool, cut into squares and dust with powdered sugar on top.
