Caribbean Lime Coolers
Lime in baked goods is not just on key lime pies. Try out this prize-winning drop cookie recipe from Betty Crocker, using lime to bring the tangy, sweet taste of the tropics. (Yields 30 cookies.)
Ingredients:
1 pouch (1 lb 1.5 oz) Betty Crocker sugar cookie mix
1/2 cup coconut
1 tablespoon grated lime peel (from about 1 lime)
3 tablespoons lime juice
6 tablespoons butter, melted
1 egg
1/4 cup powdered sugar
Directions:
- Pre-heat oven to 350 degrees Fahrenheit. In a large bowl, stir in cookie mix, coconut, lime peel, lime juice, butter and egg until dough becomes soft.
- Drop dough by level tablespoonfuls, 2 inches apart, on ungreased cookie sheets.
- Bake for 9 to 13 minutes or until edges are light golden brown. Cool for 1 minute, then remove from cookie sheet and place on a wire rack. Cool completely for about 15 minutes.
- Using a small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.
