Peanut Butter Ice Cream Sandwich Cookies
Having peanut butter along with ice cream is a perfect combination for sandwich cookies. Here is a recipe that will help you create this delicious treats that kids will surely enjoy.
Ingredients:
1 1/2 cups all purpose flour
1 cup smooth peanut butter
1 cup sugar
3 cups ice cream, chocolate or strawberry, or a combination
1 stick of softened butter
1 egg
1 tsp vanilla extract
1/2 tsp baking soda
Pinch of salt
Equipment:
Electric mixer
Sieve
Mixing bowl
Baking sheets
Parchment
Plastic Wrap
Instructions:
- Using a sieve, sift the flour, baking soda and salt together.
- Using an electric mixer on medium speed, beat the butter together with the sugar together for 2 minutes. Add in the egg and then mix well.
- Add in the peanut butter and vanilla into the mixture. Finally, add in the flour mixture into the butter mixture until they become cookie dough.
- Roll in the dough into 1 1/2 inch balls place 2 inches apart on a baking sheet with parchment. Flatten the dough balls using a fork and creating a crisscross design.
- Place the baking sheet into the oven pre-heated up to 375 degrees F. Bake for about 12 to 15 minutes until it becomes golden brown. Remove from the oven and let cool for about 5 minutes. Then transfer into a cookie rack to cool further.
- On a flat surface of one cookie, place 1 scoop of ice cream and then top with another cookie. Press them together carefully. Then wrap in a plastic wrap. Do the same with the other remaining cookies and ice cream. Place them in a freezer for 45 minutes before serving.
Makes a dozen ice cream sandwich cookies.
