Vegan Cinnamon Drop Cookie

Vegan Cinnamon Drop CookieDo you know vegans are just as discerning when it comes to their pastries?  While there is obviously no meat product in cookies, cakes, and the like, but once they learn they contain butter and cheese their faces begin to cringe.

Butter and cheese are made from milk, which comes from farm animals like cows and goats.  (Yes, there is such a thing as goat butter and cheese.)  To make pastries vegan, margarine (or vegan margarine) is used instead of butter.

You could enjoy vegan cookies even if you are not vegan.  These vegan cinnamon drop cookie recipe tastes just as good!

Ingredients:

1 cup raisins
1 1/2 cups brown sugar
1 cup vegan margarine
6 tablespoons sweet potato baby food
1 tablespoon cornstarch
1 cup English walnuts
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon cinnamon
3 tablespoons raisin juice
3 cups flour
1/2 teaspoon salt

Directions:

  1. Preheat oven in 350 degrees Fahrenheit.
  2. In a large bowl, combine margarine and sugar.  Mix until creamy.
  3. Add baby food, cornstarch, vanilla, and raisin juice.  Stir together until well-combined.
  4. Place flour, salt, baking soda, baking powder, and cinnamon on a sifter and let a separate bowl catch the sieved mixture.
  5. Add the sifted mixture into the wet mixture and stir until well-blended.  Add walnuts and raisins, mixing them until well-combined.
  6. Using a spoon, scoop a spoonful of the dough and drop it on the baking sheet-lined pan.  Make sure they are about two inches apart.
  7. Place the baking pan in the oven and bake for 15 minutes.
  8. Take the pan out and let the cookies cool in racks before serving.
