S’mores Blondies

It may not be camping season, but who says you cannot bring the campfire experience to your home?  Homemakers can make traditional campfire treats right at home without having to make bonfire, like grilling hotdogs and making s’mores straight out of the microwave.

S’mores BlondiesIf you want to take your s’mores to a higher level, you can turn them into blondies! These pastries are similar to brownies, but using brown sugar instead of cocoa.  Try out this special cookie recipe that can surely have your children beg for more. (Yields 24 bars.)

1 stick unsalted butter
Additional butter for greasing
1 cup all-purpose flour, spooned and leveled
2 teaspoons baking powder
1 teaspoon kosher salt
1 1/2 cups light brown sugar
2 teaspoons pure vanilla extract
2 large eggs
1 cup pecans or walnuts, coarsely chopped
4 graham crackers, broken into small pieces
1 cup miniature marshmallows
3/4 cup semisweet chocolate chips


  1. Preheat oven to 350 degrees Fahrenheit.  Line the bottom and sides of a 9-by-13-inch baking pan with aluminum foil.  Grease the foil with butter.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a medium saucepan, melt the butter over low heat.  Remove the pan from heat and stir in brown sugar and vanilla extract.  Whisk in eggs until well-combined, followed by the flour mixture.  Once well-mixed, stir in the pecans.
  4. Spread the mixture onto the prepared pan and bake between 20 and 25 minutes or until golden.  Insert a toothpick in the center and check if it comes out clean, indicating the baked good is well-done.
  5. Sprinkle graham crackers, marshmallows, and chocolate chips over the whole bar and bake it again for 7 to 8 minutes or until the marshmallows are pale golden.
  6. Set the pan on a wire rack and let it cool completely.  Lift the whole bar out of the pan, using the foil as leverage, and cut into 24 small bars.
