Orange Cranberry Drops

Orange Cranberry Drop CookiesIt is not often we hear oranges and cranberries being combined together, but this combination brings out a refreshing taste.  Try this recipe using orange juice and dried cranberries, resulting to a drop cookie that is beautiful to behold and pleasing to the palate.  (Yields 3 dozen.)

1/2 cup white sugar
1/2 cup packed brown sugar
1/4 cup butter, softened
1 egg
3 tablespoons orange juice
1/2 teaspoon orange extract
1 teaspoon grated orange zest
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries


  1. Preheat oven to 375 degrees Fahrenheit.  Lightly grease the cookie sheets or place parchment paper over them.
  2. In a medium bowl, combine white sugar, brown sugar, and butter.  Mix them together until its texture becomes creamy.  Stir in the egg, orange juice, orange extract, and orange zest.
  3. In a separate bowl, combine the flour, baking powder, baking soda, and salt.  Place the mixture on a sifter and sieve over a large bowl.
  4. Add the orange mixture to the flour mix, then stir in dried cranberries.
  5. Place heaping teaspoonfuls of the mixture onto the cookie sheet, about two inches apart.
  6. Bake for 10 to 12 minutes or until edges are starting to brown.  Cool on baking sheets for 5 minutes, then place the cookies on a wire rack to cool completely.
