Oatmeal Jumbles Cookie RecipeThere are many ways of making cookies. Some people prefer them to be sweet and an indulgence. But for some, they like their cookies not only delicious but healthy as well. For those who like both, here is an Oatmeal Jumbles cookie recipe to try out.

1 3/4 cups all-purpose flour
2 cups quick-cooking oats
1 1/2 cups packed dark brown sugar
1/2 cup sugar
1/2 cup walnuts, chopped
1/4 cup raisins
1/4 cup dried cherries
1/4 cup unsweetened coconut
10 tablespoons unsalted butter, at room temperature
6 tablespoons vegetable shortening
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
2 ounces bittersweet chocolate, chopped

Electric Mixer
Mixing bowls
Rimmed baking sheets
Parchment paper


  1. In a mixing bowl, mix the flour, baking soda and salt together.
  2. In a separate bowl, beat the butter, shortening both the white and brown sugars together using the electric mixer set at medium speed. Do this for about three minutes until it becomes light and fluffy. Then add in the eggs and vanilla.
  3. Setting the electric mixer in slow speed, gradually add in the flour mixture. Then add in the oats, then chocolate, walnuts, raisins, cherries and coconut. You now have your cookie dough ready.
  4. Place parchment paper into two rimmed baking sheets. Scoop about two tablespoonfuls of the cookie dough and place into the baking sheet. Place them several inches apart from each other.
  5. Place the baking sheet in the oven pre-heated up to 350 degrees F. Bake for around 10 to 12 minutes. Rotate the pans halfway through.
  6. Remove the cookies when they become light brown in color. Leave the baking sheets in an open area. Let it cool for five minutes. After cooling off, transfer the cookies on the wire racks to cool completely.
