Lime Bars

Lime BarsWe have heard of lemon bars, but do you know you can make lime bars?  This easy recipe is perfect for summer afternoons.  (Yield:  Up to 12 squares)

1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup butter
2 eggs
2 Tablespoons fresh lime juice (approximately 1 large lime)
1/2 teaspoon grated lime zest (optional)
1 cup granulated sugar
2 Tablespoons all-purpose flour
4 to 5 drops green food coloring

1.  Preheat oven to 325 degrees Fahrenheit.
2.  In a large bowl, mix flour and powdered sugar together.  Add the butter and mix until crumbly and the mixture sticks together.  Transfer the dough in an 8-by-8-inch pan, spreading it evenly.  Bake for 20 to 25 minutes or until lightly browned.
3.  While the crust is baking, prepare the top layer.  In another bowl, slightly beat the eggs.  Add lime juice, zest, sugar, flour, and food coloring.  Mix them together until well-blended.
4.  Once crust is lightly browned, remove from oven and pour the prepared mixture over the hot crust, spreading it evenly.  Bake for 20 to 25 minutes.
5.  Remove from oven and sprinkle with powdered sugar.  Let it cool to room temperature and cut into small squares.
