Gluten-Free Cherry Walnut Oatmeal Cookies

2011_1_17gfcookie-01Eating cookies is one of life’s simple pleasures. But unfortunately, there are some people who may not be able to enjoy such an experience. Some people can be allergic or intolerant to certain ingredients like wheat flour in cookies. There are other options available in the form of gluten-free cookie recipes to allow people with such allergies to eat their cookies safely. Here is a recipe for a Gluten-free Cherry Walnut Oatmeal Cookies.

3 cups gluten free oats
1 cup dried cherries
1 cup chopped walnuts or pecans
1 cup or 2 sticks unsalted butter, at room temperature
2/3 cup packed light brown sugar
2/3 cup sugar
1/2 cup brown rice flour
1/2 cup sweet rice flour
1/2 cup potato starch
1/4 cup tapioca flour
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon vanilla extract
1 teaspoon xanthan gum
1/2 teaspoon ground all spice
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg

Mixing bowls
Baking sheets
Parchment paper


In a mixing bowl, combine brown rice flour, sweet rice flour, tapioca flour, potato starch, ginger, cinnamon, nutmeg, all spice, baking soda, salt and xanthan gum. Stir the flour mixture thoroughly to combine. Set aside.

Using an electric mixer set at medium speed, cream together the butter and sugars. Add in the egg and the vanilla extract. Then, gradually add in the flour mixture to create a thick dough. Then add in the oats, cherries and nuts. Mix thoroughly until all the dough ingredients combine.

In baking sheets lined with parchment paper, place 1/4 cup full mounds of the cookie dough, with adequate spacing I between each cookie. Once done, place the baking sheets in an oven pre-heated to 375 degrees F. Bake the cookies for 10-12 minutes. Remove from the oven and let the cookies cool in the baking sheet for five minutes. Then transfer the cookies to wire racks to let them cool completely. Recipe makes two dozen cookies.
