Delicious Chocolate Sandwich Cookies

Chocolate Sandwich CookiesSandwich cookies offer a delectable treat to snack into. While you can go for variety sometimes, it is still the chocolate version that still gets the attentions most of the time. Here’s a recipe for Chocolate Sandwich Cookies that you can try out.

For the cookie preparation
1 cup all-purpose flour
1/2 cup unsalted butter
1/2 cup sugar
1/2 packed cup light brown sugar
6 oz bittersweet chocolate chips
1/2 teaspoon baking soda
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon fine sea salt
1 large egg
1/2 teaspoon pure vanilla extract

For the filling
4 oz cream cheese
2 1/2 cups powdered sugar
1/2 teaspoon pure vanilla extract

Mixing bowl
Electric mixer
Baking sheets
Ice cream or Cookie scoop


  1. Mix flour , baking power, baking soda, cocoa powder and salt into a bowl. Set aside
  2. Beat the butter and sugars together using an electric mixer until they are fluffy. Add in the egg and vanilla extract. Then gradually add in the flour mixture. Continue mixing until the ingredients start to blend. Set aside.
  3. Preheat the oven 325 degrees F. Line up the baking sheets with parchment paper and set aside.
  4. Use the ice cream or cookie scoop to measure the cookie dough into one ounce portions. Place each one onto the baking sheets. Try to form each one into a ball and flatten out the dough slightly. Put the baking sheet into the preheated oven and leave it there for around 14 minutes or when the tops of the cookies begin to crack slightly.  Remove from the oven and let it cool down.
  5. Meanwhile, prepare the filling by mixing the cream cheese and vanilla together in a mixing bowl until fluffy. Add in powdered sugar little by little and mix them until smooth. You can add a bit of food coloring a drop at a time to get the desired color. Add in water while mixing in order to get a spreadable consistency.
  6. Spread the filling into the flat side of the cookies and place the other half on top.
  7. Refrigerate the cookies for 30 minutes to make the filling set. Serve at room temperature.
  8. Serves 12 sandwich cookies.
