Caramel Cream Sandwich Cookies

Caramel Cream Sandwich CookiesSandwich cookies are not just all about chocolate or ice cream fillings. Different types also come with different choices of fillings that even kids would like. One of them is this Caramel Cream Sandwich Cookies that will surely make your mouth water. Here is an easy recipe for you to follow.

Ingredients:
2 1/4 cups all purpose flour
1 1/4 confectioner’s sugar
1 cup butter
3/4 cup packed brown sugar
1 egg
4 tbsp heavy cream
2 tbsp butter
1/2 vanilla extract

Equipment:
Mixing bowl
Electric mixer
Baking sheet

Instructions:

  1. Using a mixer, gradually cream butter in a mixing bowl. Slowly add in brown sugar. Add n the egg yolk and continue to blend them. Add in the flour continually stirring until the mixture forms into a dough. Chill the dough for a bit to make it stiff for easy handling.
  2. Roll the cookie dough into small balls roughly the size of marbles. Place in a baking sheet and then flatten until it comes to a 1/8 inch thick. Do with the rest of the dough or to fill up the available cookie sheets.
  3. Bake in the oven for 325 degrees F or 165 degrees C for 9 to 12 minutes until cookies turn light brown. Remove the cookies while warm.


For the Frosting:

  1. Brown 2 tablespoons of butter slightly in a saucepan. Remove from the heat and then blend with 1 1/4 cups of sifted confectioner’s sugar. Add in 1/2 teaspoon of vanilla along with 4 to 5 teaspoons of heavy cream. Mix until it forms into a well spreading consistency.
  2. Place the frosting on the flat sides of two cookies and place them together, sandwich style.
  3. Chill for a bit before serving.
