Brown Sugar Pecan Refrigerator Cookie

Pecan Cookies Refrigerator cookies are convenient to make since the cookie dough can last for days when placed in the refrigerator. This allows you to create batches of cookie dough in one sitting. Here is an example of a good refrigerator cookie recipe that you can make at home.

2 cups flour
1 cup brown sugar
1 cup chopped pecans
1/2 cup butter
1 egg
2 teaspoons baking powder
1 teaspoon vanilla extract
1 pinch of salt

Mixing Bowl


  1. In a large bowl, beat the brown sugar and butter using the electric mixer until it becomes smooth. Add in the egg and the vanilla extract and mix thoroughly.
  2. In a separate bowl, mix in the flour, baking powder and salt. Then add into the butter mixture little by little. Then add in the chopped pecans until the dough evenly combines.
  3. Roll the cookie dough into a log and wrap in wax paper. Put inside the refrigerator to chill for at least an hour.
  4. When baking, slice the dough into small cookie pieces and arrange in the baking sheets. Place in an oven pre-heated to 350 degrees F or 175 degrees C. leave for about 12 minutes.
  5. Allow the cookies to cool on the baking sheet for about a minute before removing and transferring to a wire rack for cooling completely.
