Bourbon Balls

Bourbon BallsThis no-bake cookie recipe is a variation of the classic Southern pastry favourite, Bourbon cookies.  The secret to make these cookies special is to use top-quality liquor, since the flavor and aroma are prominent in these goodies.

You can substitute apple juice instead of bourbon if you are going to serve this to kids.  You can also use rum if bourbon is hard-to-find.  (Yields 24 cookies.)

1/2 cup milk chocolate chips
2 cups vanilla wafer crumbs
1-1/2 cups powdered sugar
1 cup finely chopped cashews
1/4 cup cocoa powder
1/3 cup bourbon
1/4 cup light corn syrup
Additional powdered sugar for coating


  1. Melt the chocolate chips in a small microwave-safe bowl, setting the microwave oven on 50% power for 2 minutes.  Remove from the microwave and stir the chocolate until melted.
  2. In a large bowl, combine wafer crumbs, powdered sugar, cashews, and cocoa powder.  Stir until well-mixed.  Add the melted chocolate, bourbon, and light corn syrup.  Mix until well-blended and firm.
  3. Cover the mixture and refrigerate for 2 to 3 hours.  Shape the dough into small balls and roll in powdered sugar until well-coated.
  4. Store the balls in air-tight container at room temperature for 4 to 6 days before serving to mellow the flavor.
